CHILEQUILAS WITH HABANERO CHEDDAR

Chilequiles with Habanero Cheddar

Cook time-15 minutes

Total time-25 minutes

Serves 2

 

Ingredients

6 oz. Fiscalini Habanero cheddar

4 handfuls of corn chips

3 diced Roma tomatoes

1 sliced yellow onion

1 ripe avocado

¼ cup sliced green onion

1 diced jalapeno

2 chopped garlic cloves

1 ¼ cup chicken broth

2 tablespoons olive oil

2 teaspoon salt

 

Preparation

  • Heat a large sauce pan to medium high heat. Add olive oil.
  • Add sliced onion and cook for 5 minutes.
  • Add tomatoes, garlic, jalapeno and salt. Cook for 2 minutes.
  • Combine chicken broth and continue to cook for 8 minutes while stirring occasionally until sauce thickens.
  • Fold in chips w/ tongs until chips are glazed w/ sauce.
  • Shred Fiscalini Habanero cheddar over the top of chips.
  • Let the cheddar melt then plate and garnish w/ green onion and avocado slices
