CHILEQUILAS WITH HABANERO CHEDDAR
Chilequiles with Habanero Cheddar

Ingredients
6 oz. Fiscalini Habanero cheddar
4 handfuls of corn chips
3 diced Roma tomatoes
1 sliced yellow onion
1 ripe avocado
¼ cup sliced green onion
1 diced jalapeno
2 chopped garlic cloves
1 ¼ cup chicken broth
2 tablespoons olive oil
2 teaspoon salt
Preparation
- Heat a large sauce pan to medium high heat. Add olive oil.
- Add sliced onion and cook for 5 minutes.
- Add tomatoes, garlic, jalapeno and salt. Cook for 2 minutes.
- Combine chicken broth and continue to cook for 8 minutes while stirring occasionally until sauce thickens.
- Fold in chips w/ tongs until chips are glazed w/ sauce.
- Shred Fiscalini Habanero cheddar over the top of chips.
- Let the cheddar melt then plate and garnish w/ green onion and avocado slices
